Here's a sample of one of the recipes I wrote from scratch that will be included in this content pack:
Chorizo and Shrimp with Spaghetti Squash and Zucchini Noodles
Ingredients:
- 1 spaghetti squash
- ½ lb fully cooked chorizo links, sliced into bite-sized pieces
- 2-3 small zucchini, made into zoodles
- 4 Tbs. olive oil
- 2 lbs. Jumbo shrimp, peeled and deveined
- 3 cloves garlic
- 1 small can diced tomato
- 1 small onion, halved and sliced
- 2 cups chicken broth
- ½ cup Parmesan cheese
To make:
Preheat the oven to 375 degrees. Slice the spaghetti squash down the middle. Place each squash half face-up on a baking pan. Bake for about 45 minutes or until the outer skin can be pierced with a fork. Set aside to cool.
In a large skillet, cook the chorizo slices just to heated, then set them aside in a large bowl. Add to the pan drippings about a Tablespoon of olive oil, diced tomato, and the garlic, and onion. Sautee lightly, then remove these from the pan and add to the bowl with the chorizo.
Keep the skillet hot and add a little more oil if necessary. Sautee the shrimp just until pink and slightly curled. Remove shrimp from pan and add to the bowl along with other ingredients. Add a bit more oil to the pot and cook the zucchini noodles.
By now the spaghetti squash should be cooled. Fluff with a fork. Butter a Pyrex baking dish. To the bottom of the dish, add the zucchini noodles and spaghetti squash. Gently toss to combine. Mix together the chorizo, shrimp, tomato, garlic and onion. Scoop this mixture over the squash noodles. Pour chicken broth over the top. Bake at 350 for about 20 minutes.
Serve hot, with Parmesan cheese.
Makes 4 servings.

It's hard to provide carb counts when you're writing out keto recipes. Why? Most everyone has a family or group of house mates they're feeding. It's just not practical or cost-effective to make keto meals for one.
